Favorite Roll Recipes for Thanksgiving...

Posted by Rachel Parcell on

I wanted to gather a couple of my favorite holiday recipes for you! With Thanksgiving this week, my family will definitely be eating both of these. They are staples in our menu and anyone that makes them loves them! I added the recipe below for my Orange Rolls and dinner rolls that we make! Let me know if you end up make them!

-Orange Roll Recipe-

If you want to be the hit of your Thanksgiving breakfast or dinner gathering make these delicious and gooey homemade orange rolls! They are easy and every time I make them for a gathering I get people coming up to me asking me for the recipe. They are always a hit and the first thing gone from the table!

I got this recipe from my mother-in-law and she taught me how to make them when Drew and I were first married! They are now a Sunday dinner staple.

Ingredients:

{Dough}

2 Tablespoons Yeast

2 Cups Warm Water

1/2 Cup Butter (softened)

1 Egg

2 teaspoons Salt

1/3 Cup Sugar

2/3 Cup Non-fat Dry Milk

4-6 Cups Flour

{Frosting via Barefoot Contessa}

2 Sticks of Cream Cheese

3 Sticks of Butter (1 1/2 cups)

I use a little more than half of a standard powdered sugar bag

1 teaspoon Pure Vanilla Extract

1/2 teaspoon Pure Almond Extract

Rind of an Orange (this is my favorite grinder)

{Paste}

1/2 Cup Melted Butter

About a 1/2 – 1 cup of Sugar

1/2 Rind of Orange

Directions:

1. In a separate bowl add two cups warm water and 2 Tablespoons yeast. (I also add a teaspoon of sugar to help the yeast activate). Stir and set aside for 5 minutes.

2. In mixer (I use the Bosch) add: butter, egg, salt, sugar, non-fat dry milk, yeast mixure and only 2 cups of flour. Mix together.

3. Slowly add remaining flour (I usually only add 4 1/2 – 5 cups of flour. I don’t want my rolls to be dry so I always under shoot the flour. The dough should still be a little sticky when you’re removing from mixer bowl. Place dough in a large bowl to rise for 1 hour.

**While dough is rising make the frosting and paste.

4. Follow the Barefoot Contessa Cream Cheese Frosting recipe. Her recipe is in pounds so I converted it for you above in the frosting section of ingredients.

5. Paste: Melt 1/2 cup butter in bowl and add sugar and the rind of orange (add as little or as much of the rind as you want). Mix together. The sugar should make the butter grainy, if it’s still runny you need more sugar.

6. Cut the dough in half. Roll out half of dough on a clean surface into a rectangle shape (see photos above for reference). Spread the paste so it’s covering the dough (my favorite brush to use for this).

7. Roll your dough up (see picture above for reference). Once it’s rolled up get some thread to cut each roll to place in muffin tin (see image for reference).

8. Bake in oven on 400 degrees for 8-10 minutes.

9. Let rolls cool and add frosting.

10. Enjoy and be the hit of the party!!

Makes about 2-dozen.
