One of my favorite ways to ease into summer is start making super fresh salads with lots of veggies and protein. I love this recipe because it's both filling and healthy, easy to make ahead for meal prep, and uses up all the extra stuff in my veggie drawer. The instructions are super simple: Just dice and mix everything together in a bowl or separate into meal prep containers, then drizzle with fresh dressing to serve immediately, or pack everything separately to keep the veggies from getting soggy. You can also sub whatever you have on hand or love to include. Sometimes I add fruits like strawberries or dried cranberries, or add in extra zesty toppings like red onion and peppers. Yum!
Summer Salad Ingredients:
- Mixed Greens (butter lettuce and spinach)
- 1/3 Cup Slivered Almonds
- 1 Avocado (diced)
- 1 Cup Croutons
- 2 Cups Tomatoes (diced)
- 1/2 English Cucumber (diced)
- Shredded Swiss Cheese
- Parmesan Cheese
Summer Salad Dressing Ingredients:
- 1/2 good quality extra virgin olive oil
- 1/4 cup fresh squeezed lemon juice
- 1 teaspoon Dijion Mustard
- 1 tablespoon Honey
- 1 pinch of Sea Salt
- Freshly Ground Pepper
- 1 Teaspoon Minced Garlic
